As you are aware by now, my friends and cohorts – Stephen Camisa and Jon Mowry – and I are collaborating to build a modern, energy efficient and sustainable, mid-size distillery. We will produce Kentucky Straight Bourbon Whiskey and Straight Rye Whiskey the “old-fashioned way” relative to the requisites, guidelines and standards for Straight Whiskey production that have been in place for close to two centuries.
We will produce Kentucky Straight Bourbon whiskeys using both rye and wheat as small flavoring grains, and a straight Rye whiskey will also be included in our portfolio of distilled spirits. A pot still may ultimately be added to expand our beverage alcohol production to other types of beverage alcohols.
Another goal is to remain free of corporate structuring, so we can, and will, listen to our friends and consumers regarding Bourbon and Rye Whiskey mashbills, whiskey ages, bottle strengths, single barrel and small batch renderings.... This will also mean there will not be a corporate structure in place to require addition of flavors to Bourbons, or finishing of Bourbon in used barrels, of another type alcohol, to alter and change the flavor and character of our whiskeys.
Thank you for your interest in the J. W. Rutledge Distillery LLC, and for visiting our website. I look forward to visiting with you again soon and keeping you apprised of our project.
Multiple mashbills (grain recipes) and yeast strains will be used to produce our Straight Bourbons and Straight Rye whiskeys. We will distill, fill new charred white oak barrels and age them in single story rack warehouses – to better control consistency in maturation of our Bourbon and Rye whiskeys.
I have always believed Bourbon is an excellent whiskey when produced right, to sufficiently stand on its own without deviating from the requisites and standards that have made it what it is today, an awesome whiskey, and proudly America’s only native distilled spirit.
By definition, Bourbon must be aged only in new oak barrels which have been charred on the inside. The flavor generated via the distillation process and aging in new charred oak barrels may not be altered in any fashion. If flavors are added to Bourbon or Bourbon is finished in used barrels, by definition, and thereby reality, it is no longer Bourbon. The J. W. Rutledge Distillery will produce genuine Straight Bourbon and Straight Rye whiskeys only – no flavorings will be added and all our straight whiskeys will be filled and aged only in new charred white oak barrels.
We intend to design and build a very modern sustainable facility, located near Louisville, KY, that utilizes clean, energy efficient means as much as possible - incorporating technologies such as geothermal heating and cooling, solar energy, and potential utilization of biomass energy in an onsite production facility using waste materials to generate natural gas requirements.
Incorporating age old whiskey-making techniques with cutting edge sustainable environmental and socially responsible technologies, we will produce exceptional Kentucky whiskeys for many decades to come. We ask you to join us in this adventure not merely as consumers, but as friends and partners!
